Protein Pumpkin Cookies

This amazing recipe comes to you from our kitchen....which sadly no longer has any cookies. OMG. It has no added sugar, is high in vitamin B6, high protein, and as a bonus, we've included a high protein frosting recipe to keep your macros in check while enjoying the delicious taste of autumn.

You know those recipes where the finished product tastes different from the "real" thing? This recipe is not like that. The cookies as are good as any pumpkin cookie ever, and adding the decadent frosting and chocolate chips is a sure win!

For the cookies:

Preheat your oven to 350 F and prepare a baking sheet with cooking spray, parchment, or a silpat (we have tried them all and they have all been successful).

Combine:

1/4 ground flax seed

1 t cinnamon

3 eggs

3 t vanilla

1/4 c unsweetened almondmilk (or other milk of your choice)

1/4 c stevia or splenda

2 servings protein powder (we have tried it with pea and whey)

1 t baking soda

1 t baking powder

1-15 oz can of pumpkin

Mix well and spoon two tablespoon-sized amounts onto the baking sheet. Bake for 10-12 minutes. Cookies will be soft and spongy, like traditional pumpkin cookies. You COULD eat them like this, or even add chocolate chips....OR.....you could keep reading and make the delicious cookie sandwiches!

Nutrition Facts:

makes 24-26 cookies (for single cookie)

35 calories

2 g fat

5 g protein

3 g fiber

4 g carbohydrates

1 g sugar

For the frosting:

1-8oz package of greek yogurt cream cheese (you could use regular, but it doesn't have as much protein)

1.5 servings whey protein

1/4 c splenda or stevia (can be adjusted to taste)

1 heaping T greek yogurt to loosen it up

Optional: roll in mini chocolate chips or nuts. We also had the idea to make them with banana, and chocolate flavored protein powder. Delish!
