Coconut Curry Chicken

This recipe will really make your mouth water. All your veggies, so much flavor, and easy to make:
For the chicken:
We like to marinate our chicken overnight to get all those delicious spices absorbed as much as possible, but it is not necessary.
5-6 chicken breasts
2 T minced garlic
2 T soy sauce
Juice from 1 lime
3 T curry powder or curry paste
1 t ginger, fresh ginger grated in would be delicious also
1 t cayenne pepper
2 t chili powder
1 t cumin
2 t your choice of salt
Marinate for at least 30 minutes, then sautee on medium-high for 4-6 minutes, or until cooked through.
For the cauliflower rice:
1 head of caulifower
3 carrots (optional, we like to add it just so we can get our vegetables in)
blend or process together until in fines pieces and then sautee over medium-high heat until golden
If you want to plate it fancy, follow the technique in the video to construct yourself a rice tower!
For the curry:
Once the chicken is completed cooking, add in:
1.5 cups broccoli slaw
2 green bell peppers
1 yellow bell pepper
1 orange bell pepper
2 red chilis
1 cup chopped snow peas
2 T Peanut Butter
1 can of coconut milk
Garnish with your choice of: cilantro, green onions, red chilis, and of course, sriracha.
