DIY Shrimp & Bacon Sushi

Shrimp, avocado, and bacon...need I say more?

Sticky Rice Recipe:

3 cups rice (shorter grain is better, but you can use any kind, even brown)

6 cups water

Bring the water to a rolling boil, add rice, and simmer for 15 minutes. Allow the rice to sit for another ten minutes.

Dissolve 1/4 c. sugar or other sweetener (this is optional) into 1/2 c. rice wine vinegar.

Pour over rice and stir...this is where it will start to get super sticky!

I had always wanted to try sushi, but when I went out to eat, I was never sure what I should order. So, I decided to cook up some shrimp, and make it myself!

You roll the nori (seaweed) on a bamboo mat, though I've seen it done with silpats, or silicone baking sheets.

I ordered the mat from amazon.com. I covered it with plastic wrap because I wasn't sure what I was doing and wanted to keep my mess contained.

I put the mat down, the plastic wrap, the nori, then spread a little rice on and put the tasty parts in the middle so when you roll it up, they end up being in the middle.

Then pile on the yummies! I used green onions, shrimp, red bell pepper, chipotle, and bacon. I made the sauce (which foodies would call aioli out of Sriracha and greek yogurt).

For alternatives you could make:

Buffalo chicken sushi

Turkey or other deli meat sushi

Add spinach and other green leafy vegetables

Rice-free sushi if you are avoiding gluten

Use cream cheese or greek yogurt as the spread and add nuts and sprouts

MMMmmmmmmm......
