Chipotle Black Bean Burger Recipe

If you've got a hot date with the vegetarian across the street, a date with your doctor about your cholesterol, or just want to try something new, this smokey, meaty burger is just what you're looking for. High in protein and fiber!
Serves 4-5
Ingredients:
2 ½ cups of black beans (if using canned, be sure to drain and rinse them)
1 cup of cooked brown rice
1/2 cup corn
2 cloves of fresh garlic, minced
1/2 of a yellow onion, diced
4 chipotle chilis (in adobo sauce, chopped)
1 teaspoon cumin
4 tablespoons chopped cilantro
2 tablespoons Olive or Coconut oil
Pitas, buns or Orowheat Bun Thins (my personal favorite because the patty and bread ratio is important to me, it's the one in the picture).
Lettuce, cheese, tomatoes, or other toppings you like.
Instructions:
1. In a medium-size bowl, mash half of the black beans into the brown rice, but try and keep it chunky. Add the rest of the black beans and corn.
2. Add the garlic, onion, cilantro, corn, chipotles, cumin, salt and pepper to taste. Mix and portion out with an ice cream scoop or other 1/2 c. serving implement. Shape the patties and place them on a cookie sheet and put in freezer so that they firm up while you prepare the pan and buns.
3. Spritz pan with Olive or Coconut Oil and cook patties on medium-low heat for about 5 minutes per side or until cooked through.
4. Serve on pitas, on buns, or if you are feeling like impressing a vegetarian, eat it like a lettuce burger.
